The Colombia Gesha Carbonic is natural varietal from producer, Jairo Ivan Lopez. Carbonic maceration is an experimental process, introducing carbon dioxide in an oxygen-depleted vacuum to distort flavonoids and sugars. The result is an increased berry fruitiness and more tartness when combined with the inherent Gesha fruitiness.
